Here is Elwyn Frankel's boiled fruit cake recipe that was passed down to her by her mother Violet Wakefield.
Boiled Fruit Cake Recipe
Boil together 1 cup of sugar, a quarter of a pound of butter, one pound of dried fruits, 1 teaspoon of mixed spice, 1 cup of cold water, lemon peel and nuts if liked. Boil together for five minutes, then add 1 teaspoon of bi-carbonate soda. Let the mixture cool then add 2 eggs, 1 cup of self-raising flour, and one-and-a-half cups of plain flour. Bake in a slow oven for one to one-and-a-half hours. The cake is improved and has a better keeping quality if a good dash of sherry is added.
